Cauliflower Pizza Crust

Well hi! Been a while! Since I last wrote, I have embarked on a low carb diet. Well, most of the time. One of my favorite things to make to introduce others to low carb healthy eating is pizza! With a cauliflower crust. And people love it and ask me how I do it. So here’s how! Usually I opt for a head of cauliflower, chop it, throw it in the blender and pulse for a bit. If you come across a sale on fresh cauliflower, you can do this and then freeze it for later. You can use it as rice or for a crust. But I had recently been shopping and the grocery store had these new bags on sale so I decided to give them a try. I followed the instructions on the bag for heating the cauliflower in the microwave. Stick To It

After revamping my diet since last August, I have struck a plateau for the past month. Ok, two months. It’s frustrating to be sure. Especially since I have been in two weight loss competitions since January at my gym. The first one we won, but it was a team effort and my team mates carried my butt all the way to the end. The latest competition is for individuals and I am once again the weakest link. Yesterday I worked out next to the woman who has been leading the competition and I asked her what her secret was. “I just stick to the plan,” she said. I complained that I had been stuck at the same weight for some time. She didn’t believe it. “I like all your posts on MyFitnessPal.com! You lose weight all the time!” I explained to her that sadly it is the same two pounds. I lose them every other day. The other every other day, I gain them back. A New Start

Hi! I’ve revamped this blog. Initially I started it to blog about different smoothies I would make, and I think I had a post that detailed how my Fitbit worked. That was a couple years ago (and a couple Fitbits ago!). I’d like to document some foods I am making that concentrate on clean eating, low carb and as much protein as this vegetarian-who-eats-fish can pack in. I’d also like to talk about things to do to keep active, whether in general or here locally in the Southern Tier/Finger Lakes region of New York State.
